Those black calves grazing the pastures at MJ Ranch aren't just any black calves. Every aspect of their lives has been carefully aligned to feed the appetites of some discriminating consumers.

Aside from mother's milk, these calves have been totally forage-fed. They've never been given an antibiotic or a growth hormone, and they've been tended with what is described as "concern for their welfare."

It's hard to keep up with demand for these locally-marketed calves, said producers Mel and Joyce Williams, who run a herd of about 50 head in Kansas. "It's profitable, ...
