More States Resume Purchases of Lean Finely Textured Beef for School Lunches

More state school systems are choosing to resume buying lean finely textured beef for their lunch programs, largely because the product, which is blended with traditional ground beef, is as much as 3% cheaper that the ground beef itself. And while 3% may not seem like a big drop, it can mean millions in a program that every day provides lunches for more than 31 million school children.
