Milk

Milk production in the Northeast region of the country is improving, but not at the pace it did last year. However, cheese yields are improving, making up for some of the shortfall. Bottling demand has leveled off as usual this time of year. Schools will be closing in two weeks, requiring volumes of milk to be diverted to manufacturing. Class II production is slowing as holiday orders are nearly filled require more to be available for cheese and butter manufacturing as well as for drying.
