Substantial volumes of milk have been moving to cheese manufacturing. However, record butter price will likely pull more milk to butter production. This creates an interesting scenario as some butter manufacturers have been selling cream to limit production to keep inventory balanced with demand. This may have them rethink this strategy. Milk production is mixed across the nation and will continue this way as the summer progresses and temperatures have an impact on cow comfort.
