NASHVILLE, Tenn. (DTN) -- U.S. consumers are swallowing a lot more ground beef these days, and that should have cattlemen swallowing some pride and rethinking the focus on producing cattle for top-quality Choice and Prime meat grade markets.

In a new report titled "Ground Beef Nation," Rabobank economist Don Close proposes that the U.S. cattle industries focus instead on rising consumer preference for the lower-cost, easier-to-prepare meats and the growing demand for lean ground beef. Close discussed his new study Tuesday in conjunction with the 2014 Cattle Industry Convention here.
